Vida Šimat (born 1980), female, is an associate professor at the University Department of Marine Studies and leader of the research group. She received a PhD from University of Zagreb in Food technology. Her research interests include food technology, quality and safety, including utilization of food by-products. She is involved in several national (HRZZ) projects and projects with the industry for innovative solutions in seafood processing. She has published over 25 research articles in peer reviewed (SCI) journal.

Danijela Skroza, female, is an assistant professor and food scientist at Department of Food Technology and Biotechnology. Her research activities have been focused on food microbiology, antimicrobial activity of natural components, food chemistry and technology. She has published over 25 research articles in peer reviewed (SCI) journal.

Ivana Generalić Mekinić, female, is an assistant professor at Department of Food Technology and Biotechnology, Faculty of Chemistry and Technology. Her scientific interests are focused on food chemistry, natural sources of bioactive compounds and their isolation, identification and quantification. She has published over 25 research articles in peer reviewed (SCI) journals.

Barbara Soldo, female, is an assistant professor at the Department of Chemistry at the Faculty of Science in Split. The field of scientific research includes the biochemical and analytical studies of foods. She has published 16 research articles in peer reviewed (SCI) journal.

Prof Mladen Boban, male, is a full professor and a head of the Department of Pharmacology, School of Medicine with research interest and international expertise in biological effects of wine. He has published over 70 research articles in peer reviewed (SCI) journal.
