Partner No 4: CLAI S.C.A. (CLAI)
Rudy Magnani, male, got his Master Degree with honour in food science and technology, University of Bologna in 2009, with a final dissertation about the effects of antimicrobial bioactive compounds against Listeria monocytogenes. He is CLAI plant manager and has worked for this cooperative for 10 years. He is involved in several research and development project, both with other companies and with University and Research Centres and he is co-author of several scientific works, published with UNIBO members.
Gabriele Gardini, male, got his Master Degree with honour in food Science and Technology, University of Bologna in 2018, with a final dissertation about the possibility to produce fermented sausages without the use of nitrates and nitrites performing pilot scale production in industrial environment. He is actually employed in R&D section in CLAI and works with academic partners in regional and national projects.
Maurizio Tantini, male, is the manager of production laboratories. He will be directly involved in pilot scale production set up and planning thank to its skills and great experience in this sector.
Casalini Marco, male, works on production laboratories and his skills and expertise will be useful in the pilot scale trials and experimental productions.
