Ivan Šimat, male, is operational and production director of Centaurus, with over 15 years of experience in food technology and development of new innovative solutions for seafood processing. He is a leader of an innovative project for improvement of technological process for marinating prawns using plant extracts, aimed to proof specific technical feasibility criteria of the pilot line for the production of cold marinated shrimp with innovative components (plant extracts) and extend the shelf life for at least 6 months in relevant industrial conditions.
